Hi summer, this salad was made for you! And this dressing is unreal, and creamy without the dairy. I didn't give measurements for the salad ingredients because this is your life - you decide how much or how little you want of everything. But the combo of all the flavors with the dressing is next level. This recipe is plantbased & gluten free.
Salad Ingredients:
- Baby spinach
- Fresh peach - cubed
- Avocado - cubed
- Red onion (or green onion) - chopped
- Pepitas (pumpkin seeds)
- Hemp hearts
Creamy Maple Mustard Dressing Ingredients:
- 1/2 c raw cashews
- 1/2 c hot water
- 1/4 c dijon mustard
- 2 tbsp maple syrup
- 1/2 tsp sea salt
Instructions:
Soak the cashews in hot water for 10 mins (30 mins if you don't have a high speed blender). Drain, then pour into blender with rest of ingredients, blend on high for a few minutes until creamy. Add a little hot water to adjust consistency, if desired. Throw your salad ingredients together, make it look pretty - I like mine extra peachy. Top with that homemade dressing you should be v proud of, and devour!
